Recipes that i just tried out...
Cut up a yam into cubes (yam, not taro... they are different. I guess the singapore yam is actually taro, while the real yam, i dunno what it's called). Ok, so yam is then boiled in water with salt for 1-2 minutes. Then fry it with garlic. Somehow mimicking potatoes, but not quite... a cross between the mushyness of potatoes and the sharpness of parsnips. Makes a nice addition to potatoes.
Baked butternut squash too. Slice it in half lengthwise and bake it skin side up for an hour. It turns into a mash, ok... a great veg side. Mashed squash.
Finally, slice up spinach real fine.. and get a spinach egg omelette. The spinach ain't that overpowering and adds well-needed iron in your eggs!
